Oat, Apricot and White Chocolate Cookies...




This is a favourite recipe at the moment. The boys and I had fun making these one day recently, makes so many you can freeze or give as a gift...

Cream 250gm butter and 3/4 cup brown sugar and 1/2 cup caster sugar until light and fluffy.
Add egg.
Stir in 1 1/2 cups SR flour,
1 1/2 cups rolled oats,
3/4 cup chopped dried apricots,
and 3/4 cup white choc chips
Chill for 15 mins.
Roll into balls and bake for 12-15 mins.
